
I recently discovered a new love of a treat thanks to Trader Joes’ sample station. I must share this tasty and healthy concoction after making it myself a few nights ago! Chia seeds are pretty nutritious on their own. In a tablespoon, you’re looking at 6 g fiber, 3 g protein, and almost 3 g of Omega-3 fatty acids. They are great additions to smoothies, yogurt, salads, fruit and more.
Let’s talk about how my love affair with the seeds began. So this pudding…it is silly simple with just 3 ingredients, 1 bowl, and a few hours in the fridge it is up there with the easy factor of scooping some ice cream into a bowl.

Ingredients:
°1/4 cup of Chia Seeds
°1 cup unsweetened almond milk
°1/4 cup or less of honey or agave (I used agave)
Directions:
1. In a medium bowl, combine all ingredients and stir well.

2. Refrigerate for 2-3 hours and add fresh berries for a little something extra!
